Cheesy Bacon Hash Brown Waffles

I woke up last Saturday morning to my grown 29-year-old husband craving waffles. At 7:30 am. “Let’s go buy a waffle maker! And waffle mix! And make waffles!”

If only Williams Sonoma’s business hours matched his early morning ambitions.

Lucky for him, while out shopping with a girlfriend later in the day, I spotted this adorable mini waffle maker for $9.99. Sold!

The next day brought on this cheesy, potato-y waffle goodness.


Probably not the syrup-laden, sticky-sweet waffles he woke up craving. But let’s face it — there are few things I like more in this life than a deliciously eggy, cheesy breakfast. He knows who he married.


If you’re a regular S&S reader, you’ve seen the evidence of my love affair with breakfast — the chilaquiles, the tostadas, the hash brown tostadas, the breakfast pizza, and so much more.

This is now right up there as one my all-time faves. So easy, so good.




Cheesy Bacon Hash Brown Waffles


4 frozen hash brown patties, defrosted

1/4 cup shredded cheddar cheese

2 slices turkey bacon, chopped (or regular bacon – chef’s choice)

1/2 teaspoon paprika

1/4 teaspoon onion powder

1/4 teaspoon garlic

Salt and pepper, to taste

Green onions, chopped (optional)


Heat your waffle maker. I used a mini iron, but you could use a full-size, too.

Using a fork and a small bowl, deconstruct hash brown patties. Add cheese, bacon and spices, and mix, mix, mix. Salt and pepper, keep mixing. (I like a lot of pepper).

Once your waffle maker is fully heated and piping hot, spray it with nonstick spray on both sides.  Spoon in your hash brown mixture — about a cup if you’re using the mini maker. It should look like a mound. Press that baby down tight and set your timer for five minutes.

Once time is up, open your maker back up and tuck in any loose pieces that fell on the side. Continue cooking for ~1 more minute or until it’s crispy, browned and one solid piece.

Remove, plate and serve with your choice of eggs and chopped green onions. Enjoy!
