Cheesy Cauliflower Breadsticks

Making a cauliflower crust of some kind has been on my to-do list for, well, ever. Because any gluten-less human will tell you, there is just simply no replacement for pizza. Or cheese sticks. Or cheesy bread of any kind.

Until this.


For a gluten-free gal, a good cauliflower crust is like a woman’s favorite chili or lasagna recipe — it’s just a must-have. And while this was my first attempt, I think I may have found mine.

What could you not love? Cheese, garlic and deliciousness. I’ll take it.

P.S. I snapped these pics back when I had the best. manicure. ever. Seriously. It took two hours, but was insanely worth it. I may or may not have sparked mani jealousy among all of my friends and coworkers. If you’re need a good mani in Chicago, ZaZaZoo on Damen is the place!

Cheesy Cauliflower Breadsticks

Serves 6-8

Ingredients

4 cups cauliflower (about 1 large head)
3 1/2 cups mozzarella cheese
3 teaspoons oregano
4 cloves garlic
Salt and pepper, to taste
Chopped green onions for topping (if desired)

Directions

Preheat oven to 425 degrees F. Prepare a large baking sheet with parchment paper.

Chop your cauliflower into florets and add to a food processor. Pulse until cauliflower resembles rice.

Place riced cauliflower in a microwavable container and cover with a lid or plastic wrap. Microwave for 10 minutes. Once done, place in a large bowl and add 4 eggs, 2 cups mozzarella, oregano, garlic, salt and pepper. Mix together.

Place mixture on a baking sheet greased with nonstick spray. Bake (no topping) for 25 minutes or until golden. Don’t worry — it’s not burning! Then, sprinkle with remaining mozzarella and put back in the oven for 5-10 minutes or until cheese is slightly browned.

Slice and serve with marinara and top with chopped green onions, if desired.
