One of the things our pastor recommended during our first marriage counseling session was to make sure we’re enjoying our engagement. Seems obvious, but the man has a point —
we I have been so caught up in wedding planning, that at times, it’s easy to lose sight of what an exciting time this really is. (If you could see my to-do list, you would understand.)
I mean, when else are we going to get to call each other fiance?!
His suggestion? Bring on the romance. Making an effort to woo the other person will only dwindle as we start our married life, so we should be starting these fun traditions now — things that might go to the back-burner. Like love letters, or say, a picnic.
We were hoping to have a romantic night by the river together following our second marriage counseling session, but then it got canceled. (Bummer.) But it all worked out because we still had the picnic. A bright, sunny evening by the river and an array of our favorite snacks — how much better could it get?
We had fresh bread, crackers, an array of tasty cheese and a caprese-style salad. That salad is literally the easiest, most delish thing ever. We pretty much poured it over each slice of bread.
Here’s the recipe for the salad. Now go picnic.
Easy Caprese Salad
1 package mini Mozzarella balls (sometimes called pearls)
1 package cherry tomatoes
1/4 cup fresh basil, chopped
1/2 tablespoon oregano
1/3 cup olive oil
1/4 cup balsamic
Salt and black pepper, to taste
Mix it all up. Refrigerate at least 30 minutes prior to eating, and serve cold. Enjoy!
